Here’s another one of my favorite recipes and it is also one of my family’s favorite things to eat. I am making my own mouth water just thinking about this recipe. It is pretty easy although it takes a bit of time. But then anything good does take time right? So onward and upward. Oh,the dog is a little added treat for the upcoming Holidays. It’s a sketch I did several years ago for Illustration Friday!
This is a Polish dish I got from my sister-in-law who is Polish and was one of the best cooks I know.
2 c. all purpose flour
1/2 tsp. salt
1/3 c. water
Mound flour on a board and make a hole in the middle. Drop eggs and salt in well, add water and mix with hands until a dough forms. Cover dough with bowl and let rest for 10 min. Divide dough into halves, roll as thin as possible and cut our 3″ rounds.
1/2 c. chopped onion
2 tblsp. butter
1/2 tsp. salt
1/4 tsp. white pepper
2 c. mashed potatoes (you can use instant mashed)
Saute onion in butter combine potatoes and onion and blend well
Place a small spoonfull of filling on each cutout round, moisten edge, fold over and press edges with fork. Make sure edges are secure so they won’t open when boiling. Drop into boiling salted water. Cook for 3-5 min. or until they float. Remove with slotted spoon into prepared buttered bowl or collander. I let them sit a few min. and if serving immediately, saute the pierogi with butter and onion. You can use olive oil also. They taste great either way.
